Chocolate Cake recipe from our guest speaker from OPAL

1 x 420g can kidney beans, drained

1 tbsp. water or coffee

1 tbsp. vanilla extract

70g unsweetened cocoa powder

1 teaspoon baking powder

½ teaspoon bicarbonate of soda

¼ teaspoon salt

125 g butter

5 eggs

180 g sugar

In a food processor puree the beans, water/coffee, 1 egg & vanilla extract until smooth. Set aside.

Combine butter & sugar in a food processor or using an electric beater until pale & fluffy.

Add the remaining eggs one at a time, processing or beating well after each addition.

Add bean mixture & process or beat until combined.

Add sifted cocoa powder, baking powder, bicarb soda, salt & mix well.

Pour batter into a 22cm greased round or ring pan & bake for approx. 35 minutes at 180 degrees Celsius.

The cake will spring back when touched & skewer will come out clean when cleaned.

A suggestion is to scource local people as speakers. We have found people who have created a business by 'upcycling" wooden crates for children's play furniture, another who has focused on photography and painting, another who has competed in marathons in New York and China, and Thomas Edmonds  (the great singer) who came from our area- the list goes on.
