Anzac biscuits

Small luxuries, Anzac biscuits were often sent to the men at war by their loved ones in Australia as a reminder that someone was thinking of them at home. Here’s Maggie Beer’s take on the traditional bite.
Ingredients
1 cup plain flour
1 cup rolled oats
1 cup shredded coconut
3/4 cup brown sugar, firmly packed
Zest of 1 lemon
125g butter
2 tbspn golden syrup
2 tbspn Verjuice
1/2 tspn bicarbonate of soda
METHOD
1. Preheat a fan forced oven to 160°C.
2. Combine the flour, rolled oats, coconut, brown sugar and lemon zest in a medium bowl.
3. In a small saucepan, melt the butter with the golden syrup and Verjuice. Once the butter has melted, bring the mixture to a simmer before adding the bicarb soda. Stir to completely dissolve.
4. Add the hot butter and sugar mix to the dry ingredients and fold through.
5. Roll mixture into 2cm round balls and place on a lined baking tray, 3cm apart. Bake for 18-20 minutes, or until golden brown. Transfer to a wire rack to cool completely before serving.
