Twenty-five members and friends of the Latrobe Ladies Probus Club travelled to Café Escargot at Mirboo North on their most recent excursion.
They were treated to a 2-course sampling lunch prior to which many members, as their entree, sampled the snails (escargot), which are produced at the property. In the restaurant the snails are served in about 12 different dishes.
Following lunch, Vincenza told us of the process she and her husband, Doug Alexander, went through, to set up their snail breeding business, the products of which they use in their own cafe and also supply to top end restaurants in Melbourne and other areas.
We then watched a video of the stages of development of a snail, and had explained how they are prepared for the table, and cooked. To finish the day off we looked at the breeding pens. At this stage the snails are fairly dormant yet going through a growing stage.
